Baked Chicken

4 Servings

1 Chicken – cut up
3 cloves garlic
1 onion, chopped
½ green pepper, chopped
Salt, black and red pepper to taste
Canola oil
¼ tsp. Kitchen Bouquet

Preheat oven to 375 degrees. Season the chicken. Put the oil in a rectangle baking dish to coat the bottom. Place the chicken on top of oil. Flip the chicken to coat both sides leaving skin side up.
Let the chicken brown in the oven, uncovered. Turn over and let brown again. Use the oil at the bottom of the pan to baste the chicken. When both sides are brown add the onions, green peppers and garlic. Cover the pan with foil, sealing the edges. Bake 1 hour or until tender.

Gravy: Take the meat out of the dish. Place on stove to heat up. Add some water, a little at a time. Stir to loosen the drippings on the bottom of the pan. Skim off the oil from the top. Add ¼ tsp. Kitchen Bouquet.
