NOTE: As a child, I was a picky eater. But when momma made corn soup… I was so happy. My dad always grew fields of fresh corn for the cows. So when the corn was ready we would go out and pick some with my parents, come home and clean them. Fresh boiled corn for lunch was always a definite. Then corn soup a few days later.
6-8 ears of corn or ( 2 12 oz. cans corn)
1 cup onions chopped
1 cup celery, chopped
1 cup green peppers, chopped
2 cloves garlic, minced
1 15oz. Can whole tomatoes
Put soup meat to boil in a pot. Add 1 cup water per bowl of soup that you will need. Put onions, celery, green peppers and garlic in pot. Add 1 can whole tomatoes. Let boil, turn low. Cook until meat is tender. Season to taste. Add corn. Stir.
