Meatball Stew

4 Servings

1 lb. ground beef, pork, turkey or a mixture of meats
1 egg
3 slices stale bread, crumb in blender
1 cup flour
½ onion, chopped
½ green pepper, chopped
2 cloves garlic
1 tsp. roux mix
Water

Beat the eggs with a fork and then add the bread crumbs and seasonings. Add the beef and mix well. Form into meatballs. Pass the meatballs in the flour to coat well.
In a large pot add a small amount of oil. Brown the meatballs in the hot grease, turning when necessary. Add the onions, green pepper and garlic. Let sauté for a few minutes. Add the water and let boil. Add the roux and mix well. Lower the heat to a simmer and let cook until done, about 1 hour.

NOTE: Billy, my husband, cooked this for me and made a variation that was very good and different.  He broke up breakfast sausage and  brown that with the meatballs.
