Medium White Sauce

NOTE:  I got this recipe, believe it or not, from high school while in my Home Economics class. Mrs. Miller, our teacher, gave us this recipe. You will find a few recipes in this book that are from her.
I have found, over the years, that this sauce is great for many things. Add cheese to melt at the end. It’s great on vegetables, especially Broccoli and Cauliflower.

2 Tbsp. butter
2 Tbsp. flour
¼ tsp. salt
1/8 tsp. black pepper
1 cup milk

Melt butter over low heat in a heavy saucepan. Blend in flour. Remove from heat and stir in milk, stirring constantly to blend.
Return to heat and bring to a boil stirring constantly. Put on medium heat and continue to stir until it thickens. Add seasonings.
