Note: Nobody, but nobody, made fudge like my mom – unless they used this recipe. Good fudge is not easy to make, but as a friend of mine, who learned to make this fudge from my mom says, “If at first you don’t succeed, try, try again. Trust me”
8 cups sugar
1 cup cocoa
1 tsp, salt, level
2 cups pecan halves
1 stick butter
2 cups milk
2 small cans evaporated milk
Mix sugar, cocoa and salt in a large pot. Add 2 cups milk and 2 small cans evaporated milk. Stir on a low heat until melted. Raise het abnd bring to a full boil, stirring all the time so it will not go over.
Lower heat so it just boils stirring every once in awhile. Do this until it makes a firm ball when dropped in cold water. Test by dropping a bit of the mixture in a glass of cold water. When the ball hits against glass it will ping when ready.
Put 1 stick butter and nuts. Stir until melted. Let stand a few minutes. Then beat until it gets shiny and pour in buttered cookie sheets.
When cooled, cut and serve.
