Pineapple Cheese Salad

NOTE:  My mom always made this at all of the major holidays. It was such a special treat to have.

2 cups pineapple, crushed
Juice of one lemon
¾ cups sugar
2 envelopes gelatin
¾ cup cheese, grated
¾ cup cherries, cut in half and drained on paper towels
½ pint whipped cream

Heat pineapple and juice of lemon and sugar together until sugar is dissolved. Stir constantly. Soak 2 envelopes of gelatin in ½ cup cold water and add to the mixture. Put the mixture in the refrigerator until it is cooled and begins to set (like egg whites). Take the mixture out and add the cheese and cherries. (Save some of the cherries for the top). Add stiffen whipped cream. Pour in the mold and top with a few cherries. Refrigerate.
