Potato Soup

NOTE: This one is from a very dear friend of mine, Sharon. She got it from her sister.
I’ve done it just like this, it’s awesome. I have also had some leftover skirt steak from some fajita’s the night before. I chopped it up into ¼ inch pieces, put it in the soup…wow..it was so good!

5 lbs. potatoes, cut in chunks.
4 slices bacon, cut in large pieces.
½ onion
1 Tbsp. butter
2 Tbsp. flour
1 cup milk
Salt, black and red pepper, to taste

Peel and cut potatoes. While boiling the potatoes add the butter. At this time you may also add the bacon and onions. (I like to cut the bacon into smaller pieces and cook first. When almost done I add the onions and saute. Then I add all of this to the potatoes)
Continue boiling and stirring occasionally until the potatoes are cooked and breaking apart. Make a paste with the flour and milk. Slowly add to the soup while stirring. Let boil. Season to taste.
