Pumpkin Pie

8 servings

2 eggs, slightly beaten

1 ½ cups pumpkin

¾ cup sugar

½ tsp. salt

1 tsp. cinnamon

1 2/3 cup evaporated milk

1 9” pie shell, unbaked

Preheat oven to 435 degrees.

Mix all filling ingredients.  Pour into shell.  Bake in preheated 435 degree oven for 15 minutes.  Reduce temperature to 350 degrees and continue baking for 45 minutes or until knife inserted in center of filling comes out clean.  Coo.

Garnish with whipped cream, if desired

NOTE:  Watch crust if gets to brown cover with foil.
