Note: Once the meat and vegetables are cut, and you can do this early in the day and refrigerate, this is an easy, fun dish to cook. My children cooked this, in an electric wok, at an early age.
Also great with beef, pork and shrimp.
4 Chicken breast, cut up
Green peppers, cut up
Squash, cut up
Onion, cut up
Mushrooms, cut up
3 Tbsp. soy sauce
2 Tbsp. canola oil
1 Tbsp. butter
In a wok put ½ soy sauce, oil and butter. Season chicken and cook in the wok. When done, take out.
Add the rest of the soy sauce, oil and butter. Add the vegetables and cook only a few minutes until done, but still crunchy. Season to taste.
